Super Easy Sugar Cookies for the Non-Baker

DSC06348.JPGI’m not much of a baker, but every holiday season I whip up some simple sugar cookies that can be cut into holiday shapes and decorated with the kids.  I’ve sampled a number of recipes but this one from Canadian Living is by far the best and the easiest, with no weird or hard-to-find ingredients.  Best thing about them is that they take 10 minutes in the oven, another 10 minutes to cool and they’re all ready to decorate.

  • 3/4 cup (175 mL) butter, softened
  • 1 cup (250 mL) granulated sugar
  • 1 egg
  • 1 tsp (5 mL) vanilla
  • 2-1/2 cups (625 mL) all purpose flour
  • 1/2 tsp (2 mL) baking powder
  • 1 pinch salt

Line rimless baking sheets with parchment paper or grease; set aside. 

In large bowl, beat butter with sugar until fluffy; beat in egg and vanilla. In separate bowl, whisk together flour, baking powder and salt. Stir into butter mixture in 3 additions. Divide in half; flatten into discs. Wrap in plastic wrap and refrigerate until firm, about 1 hour. (Make-ahead: Refrigerate for up to 24 hours.) 

On lightly floured surface, roll out each disc to 1/4-inch (5 mm) thickness. Use holiday cookie cutters to make you favourite shapes – ours are big snowflakes and Christmas trees.

Bake 350°F (180°C) oven,  until light golden on bottoms and edges, 10 to 12 minutes. Transfer to racks; let cool completely. (Make-ahead: Store in airtight container for up to 1 week or freeze for up to 1 month). 

I make a very simple icing out of icing sugar and water (play with the proportions till you get your desired consistency).  Once the cookies are iced with the glaze (which is easy to colour with food colouring if you want), then you’ve got the perfect surface for sprinkles, candies, nuts or whatever your kids like!

    My eldest has become the sugar cookie maker. My problem this year is a 16 yer old with probable gluten intolerance. She is going to miss out on all the yummy wheat stuff. Any suggestions?
